The vinification follows the protocols for the production of organic wine with limited use of sulphites and other additives.

Fermentation took place in stainless steel tanks at controlled temperature with different maceration times: for Lambrusco, the separation from the marc takes place at the end of fermentation, for Lambrusco Grasparossa the separation has been anticipated to preserve the "fresh" aromatic potential.
